Just as the ESP may be used with specific pulse counters it may also be used with any generic pulse based unit as long as the pulses are not giving to high voltages. A generic 5V flow sensor that gives a pulse each complete revolution. You may have to measure what each revolution/pulse means in volume.

A big difference from the regular tactile buttons and a PIR is that a PIR will output a high or low Signal without someone actually pushing a physical button. The PIR uses a pyro detector which will detect change in radiated heat.
Power supply for ESP8266 is max and PIR sensor is powered by 5V. If you check datasheet for PIR sensor you will see that internally is powered by (see regulator). Internal logic is so output. It can be directly connected to ESP8266 GPIO pin.
